Recipe: Buttered Shrimp and Scallop Pasta
This easy pasta dish is a crowd-pleaser and can be prepared in about 30 minutes.
What you’ll need:
- Butter (lots of it!)
- Seafood (cooked or uncooked shrimp/scallops usually work best)
- Parmasan cheese or other hard cheese
- Cherry tomatoes
- Spinach or arugula
- Fresh or dried basil
- Salt and pepper to taste
- Fresh lemon for garnish
Cook pasta ahead of time or just after starting the sauce. Toast garlic and shallots in butter in a pan, then add the seafood and lastly the fresh ingredients. Once the seafood is thoroughly cooked and the fresh ingredients have warmed, add the cheese and seasoning. Toss pasta with the sauce and enjoy immediately!
This dish can be adjusted based on what fresh ingredients you have in the fridge. No tomatoes, no problem! Table cream can help thicken the sauce if you prefer a more creamy flavour. I tend to go heavy on the butter but that’s just me.
The only thing that can really go wrong with this recipe is over cooking the seafood! Don’t be afraid to switch up the ingredients and let us know what variations you come up with!
