Chewy Coconut Cookies

Looking for a mid-week treat? These yummy coconut cookies are simple to make, super chewy, AND contain no butter!

What you need:

  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup coconut oil
  • 2 tsp pure vanilla extract
  • 1 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 egg
  • 1 1/2 cups unsweetened coconut (flaked)
  • 1 cup milk chocolate chips


  1. Using a mixer, combine coconut oil, brown and white sugar, vanilla, and egg.
  2. Slowly add flour, baking soda, and baking powder and mix well.
  3. Add coconut and chocolate chips and stir in by hand.
  4. Roll approx 2 tsp of dough into balls and place on lined baking sheet.
  5. Bake at 350 for 10 minutes.
  6. Cool and enjoy!
