Strawberry Swirl Cheesecake

This no bake cheesecake has a very simple recipe and is easily tweaked depending on what fruit you have available. I chose strawberries as the mix in but raspberries or blue berries would work well too.

I got the basic ingredients for a no bake cheesecake from Martha Stewarts Website. I followed her method for the most part but did make some changes which you will see below!

Ingredients:

25 graham crackers

11 tablespoons of unsalted butter

2 tablespoons of sugar

2 packages of cream cheese, at room temperature

1 can of sweetened condensed milk

2 teaspoons vanilla extract

Swirl:

1 carton of strawberries

2 tablespoons of sugar

Method:

  1. Crush the graham crackers in a zip lock bag and mix together with the butter an sugar.
  2. Press the crumb mixture into at 9 inch pan (preferably a spring form one). Make sure there is an even layer on the bottom and place the pan into the fridge or freezer while you prepare the filling.
  3. Dice the strawberries and add to a pot over medium heat with about a tablespoon of water. Heat the strawberries for about 20 minutes. Watch closely and stir often! I added some sugar to the strawberries but you don’t have to if your strawberries are sweet enough. Option: Strain strawberry mixture if you prefer a smoother texture or run through a food processor to grind up seeds. Set aside to cool.
  4. Blend the cream cheese until smooth with a hand mixer and then add the condensed milk and lastly the vanilla extract.  (I used my stand mixer with the paddle attachment).
  5. Pour the cream cheese mixture into the pan. Next add the strawberry mixture little by little while swirling gently with a large skewer or toothpick.
  6. Cover with plastic wrap and let set in fridge for 2-3 hours.

  

While I was making the cheesecake I wished I had more time so I could make some variations. For example, half the cream cheese mixture and mix in the strawberry filling. This can be used to create a pink layer in the cheesecake. Or try mini cheese cakes! Instead of the 9 inch pan try some tinfoil cupcake cups.

I saved some cut up strawberries for the top!
