Roasted Sweet Potato
I love love love sweet potato! But I tend to cook it the same way every time so last night I tried to switch it up. I think the result was delicious and a great alternative.
- Sweet potato
- Olive oil
- Sea salt
- Black pepper
Heat oven to about 200 degrees celcius. Cut the sweet potato into about .7mm slices. Lay them out flat on a baking tray and sprinkle with salt, pepper and rosemary. Drizzle olive oil over the top and pop in the oven for about 20 minutes. The slices should be soft in the centre when they’re finished.
Serve with some chipotle mayo and voila! This makes a delicious starter or side dish.
